Introduction

Ingredients

    4 C oats
    3/4 C raw honey
    1/2 C olive oil
    1-2 tsp cinnamon
    1 tsp nutmeg
    1-2 tsp vanilla
    1/2 C shredded coconut
    1/2 C slivered (or chopped) almonds
    1/2 C shopped craisins

Directions

Mix honey, oil, vanilla, & spices in a large bowl. Stir in oats, flour, and coconut. For some reason the recipe says to stir in the nuts and crasins after cooking the granola, but I don't think it really matters and if they're ready, I usually stir the nuts and crasins in before cooking. Spread out on a large cookie sheet and bake at 300 degrees for 15 minutes, stir and repeat until it's as crunchy (or chewy) as you like. I bake mine until it's a light brown all over and has a nice crunch to it. This recipe can be tweaked by using different nuts, different dried fruit, etc. I double the batch and we eat it for breakfast all week. So delicious!
