Introduction

This is delicious with milk instead of cereal in the morning or sprinkled on yogurt. Smells amazing when cooking too! This is delicious with milk instead of cereal in the morning or sprinkled on yogurt. Smells amazing when cooking too!

Ingredients

    4 C oats
    3/4 C raw honey
    1/2 C olive oil
    1-2 tsp cinnamon
    1 tsp nutmeg
    1-2 tsp vanilla
    1/2 C shredded coconut
1/2 C slivered (or chopped) almonds
    1/2 C shopped craisins

Directions

Mix honey, oil, vanilla, & spices in a large bowl. Stir in oats, flour, and coconut. For some reason the recipe says to stir in the nuts and crasins after cooking the granola, but I don't think it really matters and if they're ready, I usually stir the nuts and crasins in before cooking. Spread out on a large cookie sheet and bake at 300 degrees for 15 minutes, stir and repeat until it's as crunchy (or chewy) as you like. I bake mine until it's a light brown all over and has a nice crunch to it. This recipe can be tweaked by using different nuts, different dried fruit, etc. I double the batch and we eat it for breakfast all week. So delicious!
