Ingredients

    1/4 cup olive oil
    1/2 cup onion, finely chopped
    1/4 tsp, red pepper flakes
    1 1/2 lbs. uncooked shrimp, fresh or frozen, peeled
    1/2 cup diced tomatoes
    salt, to taste
    2/3 cup grated parmesan cheese

Directions

Preheat the oven to 350 degrees. Heat the oil in a large skillet, then saute the onion for 4 minutes. Add the red pepper flakes and sizzle for 30 seconds. Add the shrimp and saute for 2 minutes. Stir in the diced tomatoes and salt to taste and cook the mixture for another 2 minutes. Transfer the shrimp mixture to a baking dish and bake for 10 minutes. sprinkle the grated Parmesan on top of the shrimp and bake for an additional 2 to 3 minutes until golden and bubbly.
