Ingredients

    1.5 Tortillas (Josephs flax lavish)
    1 LB hamburger (96/4)
    1/2 Cup corn nibblets
    1/2 Cup Black Bean (reduced sodium)
    1/2 Cup Refried Bean (fat free)
    1 Cup Weight Watchers Mexican Cheese
    A dash of cumin, cayenne and red pepper flakes (depending on how spicy you want it)

Directions

Brown hamburger in a pan. Turn heat to low.
Stir in corn, black beans, refried beans and salsa.
Mix all together until combined.

Spray casserole dish with cooking spray. Cut both tortillas down to size of dish ( i used a 9x9 square dish).
Put down tortialla, spread 1st layer of hamburger, sprinkle with cheese (1/3 cup).
Put down second tortilla, spread remainder of hamburger and sprinkle with remainder of cheese.

Bake at 350 F for 15 minutes.
Server with sour cream if desired.
