Introduction

Surprisingly delicious foccacia-like substitue for bread. Nutty flavour with a rustic texture. Only about 1.5 gram of net carb per slice! Because this is not a yeast-raised bread, but rather a "batter bread" the prep time is very quick. This bread is also gluten free and lactose free. Ingredients

    2 cups Ground flax seed
    1 tbsp Baking Powder
    1 tsp salt (optional)
    2 tsp Splenda
    1/4 cup ground almonds (Optional)
    1/4 cup coarsely ground pumpkin seeds (optional)
    5 large eggs
    1/2 cup water
    1/3 cup olive oil
    olive oil

Directions

1. Preheat oven to 350 degrees F
2. Line a 9x12 cake pan (or slightly larger baking sheet with edges) with parchment paper and brush with olive oil
3. Combine dry ingredients in medium sized bowl
4. In a separate bowl (or blender) beat eggs, water and olive oil together
5. Add wet ingredients to dry ingredients and mix together. Batter will be quite thin in consistency.
6. Set batter aside for 3-5 minutes (the flax will absorb the liquid and the batter will thicken a bit).
7. Pour batter into lined pan and spread out the batter evenly.
8. Place in centre of oven and bake 20 to 30 minutes until slightly springy to touch. This bread will be foccacia-like in the sense that it will only rise to about 3/4 inch (15mm) thick
9. Remove from oven when done, allow to cool.
10. With blade of spatula or knife, cut into 9 rectangles and slice each rectangle horizontally to make two slices of bread from each rectangle.
