Introduction

Adapted Red Lobster version of Shrimp Scampi. Actually better than Red Lobster. Serve with pasta. You can also add sliced mushrooms or onions to the dish. Ingredients

    1 lb raw shrimp peeled and devined
    1 Tbsp canola oil
    2 Tbsp garlic finely chopped
    1 1/2 cups white cooking wine
    1/2 fresh lemon juice
    1 Tsp Italian Seasoning Blend
    1/2 cup Blue Bonnet Margarine Light
    1 Tbsp parsley
    1 cup sliced mushrooms

Directions

Heat skillet and add canola oil. Do not allow the oil to smoke. Add shrimp and cook until tender and no longer translucent. Remove shrimp from pan. Cook mushrooms and remove from pan, reduce heat slightly. Add garlic and cook 2 - 3 minutes. Be careful not to brown garlic as this will produce a slightly bitter flavor. When garlic is cooked, add white wine. Squeeze juice from lemon in pan, and reduce wine by half. After it is reduced add Italian seasoning. Reduce heat to low and slowing add margarine. Add shrimp back into sauce. Add parsley and season to taste. Serve with pasta. You can also add Parmesan cheese if desired.
