Ingredients

    1 tbsp butter*
    1 large onion, diced
    ~1lb stewing beef, cubed
    ~11.5 fl oz tomato juice (ex. 1 can v8)
    4 med potatoes, cubed
    2 large carrots, cubed
    1 parsnip, cubed
    1 med. tomato, cubed and seeded
    bay leaf
    _______
    To Taste:
    pepper
    salt
    garlic powder
    Worcestershire sauce
    dried thyme
    a large pinch of ground cloves
    paprika

    *olive oil can be used instead of butter

Directions

Melt butter in a med-low heat pot
Brown onions in the butter until almost soft and translucent
Add beef and cook until brown
Add spices- careful not to overdo it. You can add more later.
Add tomato juice, return to a simmer
Add cubed vegetables and add water just to cover the vegetables
Cook on med to low heat until vegetables are soft, and beef is cooked throughout
