Introduction

This is a simple way to use zucchini or summer squash. This is a simple way to use zucchini or summer squash.
Number of Servings: 4

Ingredients

    2 large zucchini or summer squashes, sliced into rounds
    1 8-oz package of shredded cheddar
    6 slices of bacon, cooked and crumbled
    1/2 large onion, diced
    ~ 2 Tbsp italian herbs such as oregano, chives, and/or basil

Directions

Preheat oven to 375.

After preparing the ingredients, make a layer of zucchini rounds (use approx. 1/3) in an 8 x 8 pan, top with half the onions, half the bacon, some herbs, and 1/3 of the cheese. Repeat. Top with remaining zucchini and cheese.

Bake for 20-30 mins, until bubbly and top browned slightly (Can put under broiler for a min. to brown top).

Makes 4 servings.
