Ingredients

    Egg Whites, 1 Serving
    Spinach, Fresh 1 cup
    Onions, raw 1 cup
    Red Ripe Tomatoes, 1 cup chopped or sliced
    Gorgonzola Crumbles 2 tbsp
    Salt, dash
    Pepper, dash

    Gorgonzola can be substituted with Feta

Directions

Start with Onions in a skillet with non stick cooking spray. Cook for 2-3 minutes then add tomatoes and spinach. Cook for another minute and a half. Then add scrambled egg whites. Top with a dash of salt and pepper and your gorgonzola crumbles.
