This is a really simple recipe and perfect for one! You can use any kind of salsa, though green works best, and can use any cheese (different flavor/ low fat, etc.) I make it in my toaster oven and it comes out great--no need to heat up the kitchen! Ingredients

One Tilapia Filet, or other white fish filet, about 4 oz.
1/4 cup Salsa Verde, or salsa of choice
1/4 cup shredded Cheddar cheese (or your choice)
Directions
Prepare baking dish or tray of toaster over with Pam cooking spray.
Arrange fish filet on tray and cover with salsa. Cook at 325degrees for 10 minutes for thawed filet, 15 for frozen.
Sprinkle top of fish with cheese and continue cooking until cheese melts.
