Introduction

Ingredients

    3 Cups Spinach, fresh, chopped
    1/2 Cup chopped onion or leek
    1/4 Cup finely chopped carrots
    1/2 Cup finely chopped red bell pepper
    1 TBSP chopped Cilantro
    1 tsp fresh Thyme
    1 Clove Garlic, minced
    5 large Eggs
    2 Egg Whites
    1/2 cup fat-free cheddar cheese
    1/4 cup Mozzarella cheese, part skim
    1/2 cup 1% milk
    1/4 tsp red cayenne pepper
    1/2 tsp Oregano
    1/2 tsp smoked Paprika
    Pinch of Nutmeg
    1/2 tsp black pepper
    salt to taste

Directions

Spray non-stick skillet and put chopped spinach (I used about 3 cups fresh), chopped leek, chopped finely red pepper, grated garlic, chopped finely baby carrots, chopped cilantro, and salt to taste and pepper and sauteed on medium heat for about 5 minutes until spinach wilted and turned bright green. Slowly add to whisked eggs, milk, and spices. Fold in cheeses. Spray muffin pan and bake for about 25-30 minutes at 350 degrees. I've seen recipes that add dry mustard and I think I'll do that next time for even more flavor. This recipe has a lot of ingredients in it and I tend to shy away from recipes like this but I was just having fun with it and trying out different things, making it up as i went along...not too bad. Makes 12, 3 to a serving.
