Introduction

I took Mom's wonderful recipe and did some subsitutions. I took Mom's wonderful recipe and did some subsitutions.
Number of Servings: 24

Ingredients

    1 c. of rice cooked (with salt) to yield about 4 cups.
    1 qt. non fat milk
    1 c. egg substitute
    1/2 c. sugar
    1/2 c. Splenda
    1/2 c, raisins
    1 tbs. unsalted butter
    1/2 tsp. cinnamon

Directions

Cook rice according to pkg. directions.
Mix egg substitute, milk and sugar. Add cooled rice. Lightly butter 13 x 9 glass pan with butter. Save remainder. Pour rice/milk mixture into pan. Sprinkle with raisins. Cut butter into about 12 pieces and dot evenly across pudding. Sprinkle with cinnamon.
Bake at 325 F. for 2 hr. - 2 1/2 hrs. until custard is set and table knife inserted comes out clean. May cook at 350 for 1 1/2 - 2 hrs.
