Introduction

Number of Servings: 4

Ingredients

    28-30 medium to large shrimp (peeled)
    3/4 cup sliced peppers (red, yellow or orange)
    3 green onions/shallots, cleaned and cut up
    6 whole cashews (crushed)
    1/2 red onion
    1 tsp. fresh garlic
    2 tbsp. extra virgin olive oil
    6-8 grape tomatoes, sliced
    lemon juice from 1/2 lemon
    sea salt and ground pepper to taste

Directions

heat nonstick skillet on medium; add oil and saute peppers and onions for 2 minutes (ala dente')
Add garlic and cook for 1-2 more minutes
add shrimp and saute until pink (about 5 minutes)
add salt & pepper
add cashews
squeeze the juice of 1/2 lemon into dish and stir
cover and let sit for 5-10 minutes to absorb flavors
Can be served on top of salad greens, or tossed into your favorite pasta

Makes four 1/2 cup servings
