Introduction

These definitely aren't real dumplings, but it's so much easier and honestly I think this recipe is delicious! Using fewer biscuits would certainly make this healthier, and adding more veggies helps too (chopped onions, etc.). Ingredients

    2 chicken breasts, cut into small chunks
    1 can low fat cream of chicken soup
    1 can cream of celery soup
    (honestly any cream soup works, this is what I had)
    2 cans fat free, low sodium chicken broth
    1 tbsp light margarine
    seasonings to taste (salt, pepper, garlic powder, mrs. dash, etc)
    1 pkg refrigerated biscuits
    1 cup chopped carrots (or more)

Directions

Combine all ingredients but biscuits in a crock pot. Cover and cook on low for 5-6 hours. 30 minutes before serving, tear biscuit dough into small chunks and add to crock pot. Stir. Cover and cook on high for 30 minutes or until biscuits are fluffed up and cooked through.

Nutritional information divides this into 4 servings, which are pretty big servings, but I don't know exactly the size of each serving. If this isn't the main dish it would certainly be at least 6 or 8 servings.
