Introduction

Carnitas means "Little Meats" and is traditionally fried then braised. This recipe is made using the slow cooker but the results are just as tasty and low on calories. Ingredients

    1- 2 tsp ground cumin
    1 tsp crumbled dried oregano
    1 1/2 tsp ground coriander
    1 tsp garlic powder
    1/4 tsp ground cinnamon 1
    4 lb lean boneless pork roast or pork tenderlion)
    1 chopped medium onion
    4 large cloves garlic
    4 cups chicken broth low sodium

Directions

Mix together spices in a bowl and coat pork with mixture. (Some like to cube pork and coat with spices) Place in slow cooker. Place onion and garlice on top and around pork and pour the chicken broth around the sides of pork.

Cover and cook 4-6 hours on low or 8-10 hours on high . When pork is tender , remove from slow cooker and shred with two forks. Placie on a cookie sheet and bake in over on 400 degrees for 10 - 15 minutes till edges get crisp if desired.

Use cooking liquid as needed to moisten the meat.

Serve on buns with your favorite sauce. Freezes well with cooking liquid.
