Ingredients

    250g lean pork (cut into stir fry peices)
    1 tbsp light soy sauce
    1/2 tbsp cooking oil
    2 cloves garlic (crushed and chopped)
    1 medium onion (sliced lengthwise)
    1 zucchini
    1 med stick celery
    1 red sweet/bell pepper
    1 med tomato
    3/4 cup pineapple peices in juice
    1 tbsp sugar
    1/2 tbsp lemon juice
    1 tbsp/5g cornflour
    1/2 cup water

Directions

Marinate meat in soy and half the chopped garlic

Prepare all vegies before you start.
Zucchini, celery, pepper and tomato; slice lengthwise then diagonally into bitesize peices.

Fry onion and rest of garlic, fry until onion soft and almost transparent. Add pork , fry until you can't see pink. Add chunky sliced vegetables (same size as meat) extra water if needed. Cover with lid 1-2 minutes.

Add tomato, pineapple, sugar, lemon, cornflour and water, stir and simmer until sauce thickens.
Serves 2

Add rice or noodles if desired. (calories extra)

    My family of picky little eaters liked this meal. I Will make it again. I did alter recipe a little bit by using left over pork tenderloin and I added some mushrooms. - 1/24/08
