Ingredients
-
Garlic, 5 cloves crushed
Green Beans , 1 cup
Lima Beans, 2 cups
1 Bag Kroger Recipe Beginnings Mirepoix Mix
1 medium diced zucchini
*365 Cannellini Beans, 350 gram(s)
Del Monte Diced Tomatoes, No Salt Added, 1.75 cup
Crushed tomatoes, 1 cup
Chicken Broth, 3 cups
Water, tap, 2.5 cups (8 fl oz)
Dried Basil, 2 tbsp
Dried Oregano, 1 tbsp
Chopped fresh parsley, for garnish.
Directions
Saute the Mirepoix mix, zucchini garlic and green beans over medium heat until just tender, using cooking spray in a non-stick pot.
Add lima beans, both canned tomatoes, chicken broth and water. Bring to a boil, then reduce heat.
Add spices, including salt and pepper to taste, cannellini beans and pasta. Cook 15 minutes longer, or until pasta is cooked through. Sprinkle with fresh parsley.
Tip: add a small "rind" of parmesan cheese to the broth and remove just before serving. This adds a nutty flavor to the broth and some saltiness, so adjust your seasoning accordingly.
Makes approximately 7 servings, 1 1/2 cups each.
