Ingredients



    Peppers, sweet, red, fresh, 2 large
    Onions, raw, 1 large
    Garlic, 2 cloves
    Passata, 300 grams
    vegetable stock (made up with water, 4 cup
    Basil, 2 tbsp

Directions

makes 4 servings.

Chop the onion, garlic and red peppers and put in a large pan, add the vegetable stock and tomato and bring to the boil, stirring constantly.

Reduce heat and simmer for 20 or until the peppers are soft.

Drain but keep the liquid (to be added back later)

Process the vegetables in a food processor until it forms a puree.

mix the liquid back into the puree and add basil , return to the pan and heat through before serving.
