Introduction

A quick and easy way to spice up those boring old scrambled eggs! A quick and easy way to spice up those boring old scrambled eggs!
Number of Servings: 1

Ingredients

    1 egg
    1 Tbsp water
    1 slice turkey bacon, crumbled
    1/2 stalk green onion, sliced thinly
    1 tsp goat butter (or less!)
    salt and/or pepper to taste

    (the nutritional info is calculated from the above ingredients. substitute egg whites for the egg or non-stick spray for the butter for less calories and less fat!)

Directions

Fry bacon. Set aside to cool. Beat egg and water in a small bowl. Wash and cut green onion. Crumble bacon. Add bacon and green onion to egg mixture. (Use more or less bacon and onion to suit own taste. I usually use half a piece of bacon and eat the other half on the side!) Melt butter in a skillet over medium heat. Add egg mixture to the skillet, allowing it to set a bit. Gently scrape egg toward the center of the pan, stirring and scraping and turning curds as needed until desired doneness is achived. Salt and pepper to taste!
