Ingredients

    3 tbsp soy sauce
    1 clove garlic, minced
    1 tsp ground ginger
    1 tbsp olive oil or canola oil
    1 cup chunked pineapple (fresh or canned)
    1/2 cup pineapple juice
    1 tsp honey
    16 ounces chicken breast

Directions

Place the soy sauce, minced garlic, ginger, oil, pineapple juice, pineapple chunks and honey in a large glass or stainless bowl and mix well.

Add the chicken strips and mix well. Chill for at least 2 hours (overnight is best).

Preheat oven to 325°F. Place the chicken and sauce in a 12x9 inch oblong pyrex dish. Place the chicken in the oven and cook for about 20 - 25 minutes.
