Introduction

Number of Servings: 4

Ingredients


    1 box of Dreamfields low carb penne rigate, 56 grams
    2 medium Zucchini, seeded and diced
    1/4 cup Olive Oil
    2 tbsp Capers, canned,or jarred.
    1 tsp Crushed Red Pepper Flakes
    3 clove Garlic, minced
    1/4 cup Sun dried tomatoes
    12 oz Shrimp, fresh or frozen and thawed (46-53 shrimp)
    2 tbsp of Newmans Own Olive Oil and Vinegar dressing (for marinading shrimp)

Directions

Place shrimp on skewers and marinate in oil and vinegar dressing for aprox 30 min. then grill until no longer translucent. or cooked to desired doneness. Should only take a few minutes per side.

Prepare pasta al dente.
While pasta is cooking....
Warm olive oil in a saute pan. Add chopped sun-dried tomatoes, minced garlic, capers, seeded and diced zucchini, and crushed red pepper flakes. Salt and pepper to taste. Saute while pasta is cooking until veggies are tender.

Drain pasta, add to pan with veggies and toss. Top with Grilled shrimp.
