Introduction

Mixed from ingredients found in my pantry at then end of the pay period. Mixed from ingredients found in my pantry at then end of the pay period.

Ingredients



    * Lentils, 1 cup (remove)
    * *Brown Rice, long grain, 1 cup (remove)
    * Vegetable Broth - Low Sodium, 5 cup (remove)
    * Curry powder, 1 tbsp (remove)
    * Onions, raw, 1 cup, chopped (remove)
    * Garlic, 2 tsp (remove)
    * Peas, frozen, 0.5 cup (remove)
    * Mixed Vegetables, frozen (broccoli, cauliflower & carrot) (10 oz) (remove)

Directions

Saute onion and garlic in olive oil in 2 quart sauce pan. Saute until tender. Add Curry (also Fenugeek and Graham Marsala if available). Salt and pepper to taste. Add lentils, rice, and broth. Bring to boil, cover, and simmer for 50 minutes. Add frozen vegetables. Cook an additional 5 minutes. Serve in bowls (soupy consistency) with bread and butter.
