Introduction

This is my idea of Bocconcini but with eggs instead of cheese. This is my idea of Bocconcini but with eggs instead of cheese.
Number of Servings: 4

Ingredients

    6 Hard boiled eggs - sliced
    2 Tbsp Olive Oil
    6 Tbsp fresh basil
    8 cups of cherry tomatoes - halved
    (you can use slices of tomatoes also)

Directions

Just mix all the ingredients in a bowl and eat!
If you want the "sauce" to be thicker, you can add the eggs when they are just done cooking. If you want it to be closer to the Bocconcini, then boil the eggs first and wait until they are cold to slice them.
