Introduction

Number of Servings: 20

Ingredients

    3 Cups Oats
    1/4 Cup Honey
    1/4 Cup Peanut Butter
    4 Tbs Flaxseed Meal
    ____________________________
    3/4 Cups Macademia Nuts
    3/4 Cups White Chocolate Chips
    1/2 Cup Coconut Flakes
    1/4 Cup Chopped Mango Leather (or other dried fruit of choice up to 1/2 cup)
    ____________________________
    1/2 Cup Brown Sugar
    1/4 Cup Honey
    1/4 Cup Unsalted Butter
    1 Tsp Vanilla

Directions

First Prepare the basic granola from the top list of ingredients.
1. Preheat Oven to 350
2. In saucepan warm peanut butter & honey until soft but not boiling or burnt
3. In Mixing bowl have Oats & Flaxseed Meal ready to mix with sauce
4. When very warm mix peanut butter & honey with other ingredients. (Mix well, I like to use very clean bare hands!)
5. Make thin layer on cookie sheet (or sheets) and bake at 350 for 15 minutes, be careful not to burn.

Next, while the granola is baking prepare the other dry ingredients:
1. In very large bowl combine the coconut, dried, fruit, chips and nuts. Make sure their will be enough room for your granola when it comes out of the oven.
2. After the granola mixture comes out of the oven you will set it aside to cool. This will be mixed in with the other dry items prepared above.

Prepare last hot items:
1. In saucepan warm butter, vanilla, sugar and additional honey.
2. Allow to come to a boil and then simmer for no more than 2 minutes (until everything is dissolved)
3. Pour this mixture over top of all of the other ingredients in the large bowl.
4. Mix well, (again theres nothing like using your hands - but don't burn yourself!)
5. Put mixture into a large baking dish and pat firmly.
6. Refrigerate for 2 hours, then cut and serve or store for later.
