Ingredients

1 cup or about 3 leeks, cleaned, sliced and chopped
1 small onion chopped
1 cup celery chopped
1/2 cup carrots chopped
2 cups red skin potatoes with skin on (about 10 small)
2 Tbsp olive oil
1 cup pearl barley uncooked
4 cups Pacific Oraganic free range chicken broth
3 cups water
1 12.5 oz can Tyson Premium chunk chicken white meat
1 TBSP salt
1 tsp pepper
1 TBSP Spice Hunter Herbes De Provence
Directions
Chop all the vegetables. In a large stock pot add the olive oil and saute leeks, celery and onions until transparent. Add chicken broth and water. Add potatoes, carrots, barley, chicken and seasonings.
Bring to a boil and then lower heat to cook gently for about 2 hours until all the vegetables are tender and the broth is rich and creamy.
