A rich savory potato soup that will become a favorite comfort food. A rich savory potato soup that will become a favorite comfort food.
Number of Servings: 6


    1 cup or about 3 leeks, cleaned, sliced and chopped
    1 small onion chopped
    1 cup celery chopped
    1/2 cup carrots chopped
    2 cups red skin potatoes with skin on (about 10 small)
    2 Tbsp olive oil
    1 cup pearl barley uncooked
    4 cups Pacific Oraganic free range chicken broth
    3 cups water
    1 12.5 oz can Tyson Premium chunk chicken white meat
    1 TBSP salt
    1 tsp pepper
    1 TBSP Spice Hunter Herbes De Provence


Chop all the vegetables. In a large stock pot add the olive oil and saute leeks, celery and onions until transparent. Add chicken broth and water. Add potatoes, carrots, barley, chicken and seasonings.

Bring to a boil and then lower heat to cook gently for about 2 hours until all the vegetables are tender and the broth is rich and creamy.

  • Incredible!
    I loved this recipe, I lowered the salt and omitted the "hunter" spice as I don't have a clue what that is, but used .5 tsp poutry seasoning instead. I used .5 of a cup of raw barley and found I had to add more water.
    The end result was amazing and I'll be making this one alot more.
