    1 1/2 cups all-purpose flour
    3/4 cup sugar
    2 tsp baking powder
    1/3 cup canola oil
    1 egg
    1 1/2 cups fresh blueberries
    1/3 cup skim milk


1. preheat oven to 400 degrees. Prepare muffin tin.

2. Mix flour, sugar and baking powder. Place oil in one cup measuring cup; add egg and enough milk to fill the cup. Add this to flour mixture. Fold in blueberries. Fill each muffin cup 2/3 full.

3. Bake for 20-25 minutes or until done

Makes a dozen muffins

    These sound tasty! I've been using 7up instead of eggs and oil in everything I bake lately. Hmmm... I may try that with these too! - 8/24/07
