Number of Servings: 16

Ingredients

    2 cups all purpose flour
    3/4 cup whole wheat flour
    1 cup unpacked brown sugar
    1-1/2 tsp baking powder
    1/2 tsp baking soda
    1 tsp cinnamon
    1/2 tsp salt
    3 egg whites
    2 tbsp melted butter
    3/4 cup no-fat plain yogurt
    1 tsp vanilla
    2 cups mashed ripe banana

Directions

Preheat oven to 325 degrees.

Combine flours and dry ingredients in a large bowl (first 7 ingredients in list).

In a medium bowl, beat egg whites, butter, yogurt, and vanilla. Add bananas and whisk until smooth.

Add wet ingredients to dry ingredients, stirring only until moistened.

Spray a 9x5 inch loaf pan with non-stick spray. Pour batter into pan.

Bake at 325 for 1 hour & 20 minutes (or 80 min). Remove and cool before serving.
Makes 16 servings (slices).
