Introduction
Quick & easy breakfast, suitable for low-carb and low-GI diets such as Greek Doctor, Gallop, South Beach, Atkins Phase 2. Really filliing. You can easily vary the vegetables according to what you have--mushrooms are very nice--or use frozen, tinned or leftovers. People who have to watch their cholesterol intake may use 4 egg whites instead and make a fabulous hair mask with the yolks. Just remember to recalculate calories if you make any changes.Bonus: there's very little washing up, with experience you can even beat the eggs directly into the semi-cooked vegetables. Ingredients

1 ripe tomato
1/2 green bell pepper, chopped
1 medium eggs, beaten
a pinch of herbs (basil goes well with tomatoes, for mushrooms try tarragon)
Directions
Makes 1 serving
Chop or slice vegetables.
Place in a large deep microwaveable plate.
Sprinkle very lightly with salt.
Microwave 2'. (If using leftovers or frozen veg, make sure they're heated through thoroughly.) Don't overcook, they will cook some more with the egg.
Pour over beaten egg, add herbs, mix thoroughly in the plate.
Microwave 1' 30". (Adjust time according to your oven and how well set you like them--sometimes I stir them every 30" for a creamier scrambled egg effect.)
Leave to cool a bit, it will set further. Enjoy with freshly ground pepper.
