Ingredients

    I large whole wheat pita, halved
    4 oz chicken thigh, skin and fat removed
    1/4 cup fresh mint chiffonade
    1/2 cup of tomato
    1/2 cup cucumber with peel, chopped
    4 T Ajvar bell pepper and eggplant spread

Directions

Shake garlic salt, cayenne pepper, and ground ginger evenly onto both sides of chicken.

Cook chicken in nonstick pan with spray until done. Set aside, slice.

Spread two tablespoon ajvar per half of pita.

Salt sliced veggies, I mist with red wine vinegar.

Assemble pitas.

Serves two!
