Introduction

Number of Servings: 1

Ingredients

    2cups regular or baby spinach
    4 slices of bacon, 3tbsp fat reserved
    1white mushrooms, sliced
    1/4 C red onion, sliced thin
    3 hard boiled eggs diced
    3tbsp of red wine vinegar
    1 packet splenda or other artificial sweetener

Directions

boil 2 eggs
cook 4 slices bacon until crispy, reserving 3tbsp of rendered fat
remove stems from mushrooms and slice, combine with thinly sliced RED onion and spinach
crumble crisp bacon over salad
in a small sauce pan combine rendered bacon fat, red wine vinegar and splenda pack, simmer about five minutes over low heat, stirring to combine.
Immediately before serving pour warm bacon vinaigrette over salad and toss lightly to coat
Makes 1 or 2 servings, depending how big you want your salad.

    700 calorie salad and you worry about a teaspoon of SUGAR...salad sounds great, but way out of my nutritional ranges.. - 9/18/10

    salad is more for low carb plans than low calorie ones, hence the sugar substitute. But it is a great salad.
