Number of Servings: 4

Ingredients

    4 Medium Ripe Tomatoes

    2 tbsp chopped Basil
    1 tbsp chopped Oregano
    1 tsp chopped Thyme
    1 clove of crushed Garlic
    30 grams of shredded Swiss Cheese
    2 tbsp of Shedded Parmesan
    1/2 tsp Salt
    1 tsp ground Black Pepper
    2 tbsp Extra Virgin Olive Oil
    2 slices of Whole Weat Bread

Directions

Makes 4 Servings

Cut the top off of the tomatoes and hollow them out, throw away insides or use for another recipe. Place the hollow tomatoes upside down on paper towel to drain juice while you prepare the rest of the recipe.

In a bowl mix basil, oregano, thyme, garlic, swiss cheese, parmesan, salt and pepper. Mix well. The two slices of fresh bread to to be cut to crumb size or slightly larger. I use a food processor to make my crumbs. Add the crumbs to the mixture and mix well. Pour one tbsp of the olive oil into the mixture and stir well.

Stuff each Tomato to the top with the mixture and put on a baking sheet with non stick spray. Use the remaining tbsp of olive oil to pour on top of the four stuffed tomatoes.

Bake for 20 mins at 350 degrees celcius. Serve hot.

    We enjoyed the tomatoes and the kids had fun making them. Next time we make we are using less herbs. There was to much Basil for my taste, I think. Great otherwise and fun to make! - 8/22/07
