It's Raw People! If you want to get all the nutrients out of your food then make it RAW. This recipe is loaded with Vitamins, if you want less fat (good fat though) remove the avocado.I had several young coconuts and I had to use them so I whipped up this recipe off the top of my head So hope you like it.

Ingredients

Meat from a young coconut
1 cup of raw young coconut water
4 Tb. of Chia Seeds
1lrg. Ripe Banana
1/2 Avocado
2 Tb. of Raw Cacao Powder
Paste from 1 Vanilla Bean
Dash of Cinnamon
1/2c of Raw Agave
Directions
Well What can I say it will take you more time to get the meat out of the coconut that's why the 30 minutes over all But well worth it.
I added all the ingredients: Coconut meat, coconut water, chia seeds, banana, avocado, raw cacao powder, vanilla bean paste and dash of cinnamon in a blender and liquefy.
Tasted the pudding and realized it needed more sweetness so I continued to add the Agave until I got the taste I wanted. I didn't make it too sweet but you can sweeten it to your liking.
The banana and the chia seeds make the consistency of the pudding.
