Introduction

Ingredients

    4oz unsalted butter or margarine (GB Stork Margerine)
    1 cup milk
    1 cup mixed fruit
    1 cup demarera sugar or sugar substitute
    2 cups self raising flour
    1 egg

Directions

Put butter, milk, sugar and mixed fruit in a bowl and microwave on full power until butter has melted and then mix well. Leave to cool slightly. Mix in flour which has been sieved. Whisk egg and add to mix. Put in loaf/baking tin and bake for approx 35-45 min at 160. At the end of this time if still sticky turn off oven and leave cake in oven for a few minutes more.

Lovely cake for a treat. Please note that making cake with demarera and butter ups the calories and fat content, but it's every bit as nice with the low cal options. (portions calculated using low cal opt.)
