This is a delicious recipe, easy to prepare and a perfect all-in-one dinner. Ingredients

    2 packages ground turkey (about 32 oz in total)
    1 red onion
    2 cloves garlic, minced
    some veggies (I used a zucchini and a green bell pepper and mushrooms), diced
    1 can of corn
    2 cans of beans (I used 1 can kidney beans, 1 can cannelli beans)
    2 cans diced tomatoes
    1 jar of salsa (I used medium-hot)
    2 tbsp chili powder
    1 tbsp ground cumin
    1 small can of tomato paste
    chopped up scallions
    shredded cheese


Directions

Over medium heat, sautee the garlic, onion and turkey in some olive oil until browned. Throw into a large crockpot. Add the veggies, corn, beans, diced tomatoes, salsa and spices. Cover and cook on low heat for 5 hours. Stir in tomato paste. Serve in bowls and sprinkle lightly with lowfat parmesan cheese and scallions. Makes 10 1.5 cup servings.
