Ingredients

    1 cup Atkins Bake Mix
    1 package Splenda (0.5 tsp or so) or other sweetner
    2 tsp Baking Powder
    1/4 tsp Salt
    1 cup Half and Half Fat Free (original recipe uses full fat half and half)
    1 Whole Egg
    Non-stick vegetable oil spray (butter, canola, etc. flavor)

Directions

Pancake Directions:
Blend all dry ingredients together in a large mixing bowl.
Add the half and half and egg. Whisk batter. Let the mixture sit for at least 5 minutes to activate the baking powder. Coat pan with non-stick vegetable oil spray. Cook the pancakes on the pan using medium heat. Flip the pancakes when bubbles appear on top and edges start to cook. Recipe makes 10, 4 inch pancakes. About 3 Net Carbs per pancake

Waffle Directions:
Follow the same recipe as the pancakes. Pour the batter
in the center of the waffle iron. Cook waffles in iron
(about 1 - 1.5 minutes or until ready). Recipe makes 5 waffles. About 6 Net Carbs per waffle

    The name Atkins needs to be removed from this recipe. You would never swap out cream or real half & half for no fat. Your loosing essential fats which will screw up the diet. Calling it Low Carb is fine, but not Atkins - 2/15/14
