Introduction

This is a quick easy meal with a LOT of flavor! Can be made for breakfast or dinner, and is fun to customize by adding your favorite veggies to the mix! Ingredients

    1 1/2 c. Egg Substitute (Egg Beaters)
    1/4 c. Red Pepper (chopped)
    1/4 c. Green Pepper (chopped)
    1/2 medium White Onion (chopped)
    1 bunch Green Onion
    1/2 c. fresh Baby Spinach
    2 wedges Laughing Cow Light French Onion cheese
    2 servings (about 4 oz. or 8 slices) deli Turkey Breast meat
    1 Tbsp. Olive Oil
    1/2 tsp. minced Garlic
    dash Red Pepper Flakes (optional)
    dash Cumin (ground)
    Salt & Pepper to taste

Directions

In a large frypan, heat olive oil and sauté chopped bell peppers, onion, and garlic for 2-5 minutes, until onions are translucent.

Pour in egg substitute and gently stir with vegetables. Scramble for a minute until egg starts to clump, then add red pepper flakes, dash of cumin, spinach, chopped green onions, and deli turkey (torn into small pieces). Scramble until mixed and add Laughing Cow cheese wedges, cut into pieces. Let cheese melt and mix. Salt and pepper to taste.
