Introduction

Recipe modified from the Low Carb Friends forum. I made it with almond flour instead of soy and applesauce instead of butter. Fits 2lb bread machine. Cut recipe in half for one pound machine. Ingredients

    1 cup water
    2 large eggs
    2 tbsp. unsweetened applesauce
    1 packet stevia plus
    1/2 tsp. granulated suger (for yeast to eat)
    1/4 tsp. salt
    2/3 cup ground flax seeds
    1/2 cup almond meal/flour
    1 1/2 cup vital wheat gluten flour
    2 tsp. dried yeast

Directions

1. Combine ingredients according to bread machine manual.
2. Select Rapid bake and "light" browning setting.
3. Don't remove bread until it is cooled.
4. Cut into 20 thin slices using an electric knife.
5. Store covered in the refrigerator.

    Good
    It smelled amazing while it was baking but was slightly bland and the texture was spongy. It was 50/50 in my house as for who liked it and who didn't. I liked it but definitely go into it with a mindset of "Taste pretty good for low carb bread" I think I will try it again. Should toast really well
