Ingredients

1 cup, old fashioned oatmeal (not instant)
1 cup, skim milk
1/2 cup, unsweetened applesauce
1/2 cup, egg substitute (like eggbeaters)
1 cup, whole wheat flour
1/4 cup, splenda brown sugar blend
1 tsp, baking powder
1/2 tsp, baking soda
1/2 tsp, salt
1 tsp cinnamon
2 tsp, splenda no calorie sweetner
1 tbsp diced almonds (optional, but is included in nutritional information)
3 tbsp blueberries (optional, but is included in nutritional information)
Directions
Soak the oats in the milk for one hour.
Preheat the oven to 400. Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg substitute, and mix until combined.
In a separate bowl whisk the dry ingredients together (minus blueberries and almonds)
Add wet to dry ingredients and mix until just combined. Add nuts and berries. Do not over mix the batter.
Spoon mixture into muffin pan and bake for 20-25 minutes.
