Introduction

Whenever I bake potatoes on the BBQ, I always make a few extra to use in this soup.

This garlic loaded soup takes away the need to add all the fat and calories that comes with the cheese and bacon that is normally in regular baked potato soup.

Ingredients


    3 bulbs of roasted Garlic
    690 grams of cooked cubed Baked Potato
    2 cups Onions, chopped
    4 cups Blue Menu Chicken Broth - no salt added
    1 cup hot Milk, 1%
    Olive Oil, 1 tbsp (remove)
    1 cup chopped green onion
    freshly ground black pepper to taste
    90 grams soft goat's cheese - divided into 6 x 15 gram servings

Directions

Saute onions in olive oil
Add 3 whole bulbs of roasted garlic plus wine. cook until alcohol is evaporated.

Add cooked cubed baked potatos, broth, and hot milk
Blend until smooth - heat until soup bubbles - add chopped green onions for last few minutes. Add freshly ground black pepper to taste

Serve with 15 grams crumbled goats cheese on top of soup

Makes 6 services, 1-1/2 cups each
