Introduction
A lovely, higher calorie bread. Though higher calorie per 10 servings, it provides lots of healthy fat if you use olive oil based margarine. Very filling! I got it from a Jean Pare cookbook, so I didn't make this up myself. I substituted lemon for the orange and it turned out beautifully. Also, this recipe does not include added nuts. Ingredients

1/2 cup butter/margarine (olive oil based)
1 1/2 cups of granulated sugar
2 eggs
1 cup canned pumpkin
1 tbsp grated rind of orange or lemon
1/4 cup orange or lemon juice

2 1/4 cups of white flour
1/2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp cloves
1/2 cup of chopped nuts (optional)
1/2 cup of chopped dates (optional)
Directions
-Cream butter and sugar. Add one egg and mix. Add the second egg and beat until smooth. Mix pumpkin, rind, and juice into the bowl.
-In a SEPARATE bowl add all remaining ingredients. Pour into batter and stir to moisten only. Do not over-mix otherwise it won't be as fluffy or moist. Pour into a 9x5x3 pan and bake at 350 F (180 C) for an hour or until a toothpick is inserted and comes out clean.
