Introduction
This is a wonderful protein kick, loaded with flavor and nutrients. I call this recipe 'must go' soup beacuse it is a compilation of everything in my fridge about to expire! Ingredients

4 cups Turkey Broth (Fat Free)
4 cups Chicken Broth (Fat Free)
1 can White Beans (drained)
1 can Canellini Beans (drained)
1/2 can Garbonzo Beans (drained)
***(you can use any white bean of preference, or whatever is left in your cupboards!)***
8 slices of Bacon
2 cups frozen chopped spinach
1/2 package of white mushrooms
2 oz feta cheese (not pre-crumbled)
1 cup grated carrots
4 cloves garlic
1 tsp black pepper
1 cayenne pepper, diced
1 small onion, chopped
1/2 tbs red pepper flakes
splash of red wine vinegar
2/3 cup brown rice
1 tbs olive oil
Directions
1) Brown bacon in a skillet, and pour off fat. Set bacon aside to cool, then chop up into small pieces.
2) Combine every ingredient in a large, deep pan and simmer on low-med heat until the brown rice is done. This takes about 45 mins. (I threw everything together in at once and let it slow cook).
3) Make sure to stir the soup every few minutes since everything can settle and burn on the bottom.
4) ENJOY! (This will yeild about 8 1cup servings. You can make the soup less thick if you want by adding water. The olive oil is optional, as well as the bacon. Any substitute for beans is welcom...remember, this is an "everything in my fridge 'must go'!" type of soup :)
