Ingredients

    3 leeks
    3 cloves of garlic
    1 tbsp olive oil
    8 cups sodium reduced chicken broth
    230 grams of peeled potatoes (about 6-8 mini potatoes)
    1 cup skim milk

Directions

Saute garlic in olive oil then add leeks and saute until soft. Add broth and potatoes and cover while simmering for about 30 mins. At this point you may puree soup or leave chunky and add the milk right at the end being careful not to boil the milk. Serves 8. :)
