This is NOT low in fat, but on those days you have some extra calories to play with, this is your dish if you're a mushroom lover!!!!!!!! Ingredients

1 pounds portobello mushroom caps
1 stick butter, unsalted
2 tbsp olive oil
1/4 c. ap flour
2 1/2 c. milk
1 cup parmesan cheese
1 cup part skim mozzarella cheese
lasagna noodles
Directions
Preheat oven to 350 degrees.
Slice mushroom caps.
Place milk in a sacepan and bring to a simmer.
Place 1/2 stick butter in a pan and melt it, add the flour, stir for one minute.
Add the milk all at once and stir with a whisk until it creates a sauce.
Place the remaining butter and oil in a saute pan, and cook the mushrooms until tender.
Get a lasagna pan and layer the bottom with sauce, then noodles, then mushrooms, then a handful of cheese, repeating this process until you have about 3 layers.
Finish with the remaining cheese and cook until starting to brown on top, about 45 minutes.
