Ingredients

    1-10oz package of yellow rice
    1 medium onion
    1 12.5 oz canned chicken breast (you can use cooked chicken instead)
    1 Tbsp chili powder
    1 oz can cream of chicken soup 98% fat free
    1 cup light sour cream
    10 oz shredded cheddar cheese made with 2% milk
    1 10 oz can Rotel diced green chilis and tomatoes

Directions

Prepare yellow rice per package instructions.
In long 13" x 9" casserole dish-layer rice in bottom. Cover with chicken and onions. Sprinkle with chili powder. Mix cream of chicken soup and sour cream together. Spread over chicken. Cover with cheddar cheese. Pour drained can of rotel diced chili's and tomatoes on top in center. Bake uncovered at 350 degrees for 30 minutes and until cheese melts. Enjoy!
