Ingredients

    4 green tomatoes, thickly sliced

    1 tsp salt

    1/2 tsp pepper

    1 Tbs light margarine

    1 cup grated fat free cheddar cheese

    10 reduced fat crackers, crushed

    1 Tbs light margarine, melted

Directions

Preheat oven to 350. Lightly spray and 8-inch square baking dish with vegetable cooking spray. Layer green tomatoes with salt, pepper, butter and cheddar cheese in greased baking dish. Bake at 350 for 30 minutes, or until the tomatoes are tender. Sprinkle cracker crumbs on top and drizzle with butter. Bake 5 minutes longer.
