Introduction

Fast and easy, with a sweet and sour type flavor. Noodles can be substituted for rice and it is enhanced by adding chicken, but I don't always have it available and wanted the calorie count without it. Ingredients

    2 cups cooked rice or noodles
    3 cups low sodium chicken broth
    1 can (about 2-1/4 cups) pineapple in it's own juice
    1-2 cups cooked chicken, chopped (optional - not included in calorie count)
    3 TBL tamari or soy sauce, low sodium
    1/8 tsp ground ginger

Directions

Combine all ingredients and heat until warmed through. Makes approximately six one-cup servings.

Variations: Substitute Ramen noodles or something similar made from rice. I prefer chunk pineapple, but crushed is good as well.
