Ingredients

    4 Thick strips bacon, diced
    1/2 pound okra, cut into 1/2 -inch-thick rounds
    1 cup long grain white or brown rice
    1 tbl chopped fresh basin (optionsl)
    2 cups Beef Stock
    1/8 tsp hot pepper sauce
    Salt and freshly ground black pepper

Directions

Saute the diced bacon in a medium saucepan over medium heat until crisp. Stir in the okra; cook one minute. Stir in the rice, basil, stock, hot pepper sauce, and salt and pepper to taste. Heat to boiling, reduce the heat. Cook, covered, over medium low heat until the rice is tender, about 25 minutes, a bit longer for brown rice. Remove the cover and continue to cook until the mixture is fairly dry.

Serves 4 to 6.
