Introduction

From a recipe on Foodnetwork that I reworked to fit my dietary needs and taste. From a recipe on Foodnetwork that I reworked to fit my dietary needs and taste.
Number of Servings: 8

Ingredients

    15 garlic cloves
    1 pound cherry tomatoes
    1/4 cup parm cheese
    1 cup fresh baby spinach
    1 pound linguine
    1/2 tsp red pepper flakes
    Olive oil spray
    4 tbsp EVOO

Directions

Spray tomatoes with olive oil spray, place garlic cloves and EVOO in small baking dish.
Place in preheated 375 degree oven, bake for 25-30 min.
Drain garlic and reserve oil.
In food processor place garlic, tomatoes and spinach and enough reserved olive oil to bring the pesto together.
Cook pasta according to pkg directions and drain.
In large bowl combine pasta and pesto.
Can be prepared with chicken tenders or shrimp. (not included in values)

Makes (8) 2 oz servings of pasta.
