Ingredients
1 TBS Parkay squeeze margarine
7 servings (abt 35 sprays) Parkay Butter Spray
3/4 cup Graham Cracker Crumbs
1 cup Egg whites
1/2 cup Nellies & Joes Key West Lime Juice
1 Can fat free sweetened condensed milk 14 oz can
1 Tsp grated Lime Peel
14 muffin/cupcake foil liners
Directions
Preheat oven to 350
Mix together graham cracker crumbs with 1 tablespoon of squeeze margarine and about 5 sprays of spray margarine.
Spray the bottoms of 14 cupcake liners with 2 sprays of margarine. and place in muffin tins. Press 1 Tablespoon of graham cracker crumb mixture in the bottom of each liner. Set remaining crumbs aside for garnish.
Mix together the egg whites with whisk for about 15 seconds. Do Not over mix. Add condensed milk, key lime juice, and grated lime until well mixed. Fill each cup with mixture to. Bake for 15 - 18 m about 1/4 inch from top of liner. Bake 15-20 minutes, until the mixture looks set. It will be shiny on top but will not be jiggly. Let cool in pan for 5 minutes. Move to wire rack, sprinkle with remaining crumbs and allow to cool. Serve at room temperature or chilled. Garnish with small wedges of lime and a small amount of *whipped cream if desired.
