Ingredients

    1 tablespoon EVOO
    5 minced garlic cloves
    1/4 cup of minced parsley
    1 large can of diced tomatoes
    1 teaspoon oregano dried
    1/4 teaspoon salt
    .5 teaspoon of cayenne pepper
    .5 teaspoon of red pepper flakes
    140 grams of whole wheat fusilli pasta
    3/4 pounds of raw chicken
    .5 cup of shredded mozzarella
    5 grams of grated parm cheese

Directions

Saute garlic and parsley in the oil until brown. Add tomatoes and spices and cook on low for 15 minutes stirring frequently. Add the chicken (cut into 1/2 inch cubes) and cook for 15 minutes. Add the mix to cooked pasta. Sprinkle mix with the cheeses. Put under broiler for 2 or 3 minutes.
