Introduction

Yummy casserole suggested by my trainer, Lance. Very nutritious! I bake this at the beginning of the week and eat on all week. Delicious with a touch of hot sauce on top. Ingredients

    4 cup cooked brown rice
    3/4 c cottage cheese
    10 egg whites
    8 whole eggs
    1 lb lean ground turkey
    1 medium onion, diced
    1 medium bell pepper, diced
    1 pkg mushrooms, presliced
    2 cups steamed broccoli, chopped
    3/4 cup skim milk
    2 cups grated cheese
    Seasoning to taste (Tony Chachere's, salt, pepper, etc.)

Directions

Preheat oven to 350 degrees F. Combine precooked rice, cottage cheese, and two egg whites in large bowl. Pat down into a greased 9 x 13 pan. Bake for 7 minutes.

Remove from oven and raise temperature to 400 degrees. Brown turkey, add onion and bell pepper to soften in skillet. Next, combine browned turkey, softened onion, softened bell pepper, steamed broccoli, and mushrooms, then spread over top of rice mixture.

Whisk together remaining egg whites, eggs, cheese, and milk. Pour over top of rice and meat mixture. Bake @ 400 degrees for 15 minutes. Then, while dish still in the oven, lower oven temperature to 350 degrees and bake for additional 20-30 minutes until eggs are set.
